 Bhavesh's grandma, Ba, got to meet Colin this weekend.  Since Colin calls Bhavesh's mom Ba, Bhavesh's Ba became BaBa.  Needless to say, they hit it off!

Mango Cupcake Recipe

Mango Cupcakes
1 box yellow cake mix
3 eggs
1 cup mango pulp
1/4 cup vegetable oil
 Heat oven to 350 degrees F.  Combine all ingredients, mix on medium-high.  Fill lined muffin tin about 3/4 full.  Bake 15-20 minutes or until a toothpick inserted in the middle comes out clean.(Basically you make the cupcakes as per the recipe on the box but you substitute mango pulp for the water.  Adding mango pulp may make them brown faster than normal.)

Mango Frosting
1 1/2 sticks of butter - room temperature
8 oz lite cream cheese
1/4 cup mango pulp
1 tsp vanilla extract
3-4 c. powdered sugar
1-2 tbsp milk
Combine cream cheese and butter on medium-high speed.  Add in vanilla and mango pulp.  Beat to combine.  Add in powdered sugar 1 cup at a time until desired consistency.  Add 1-2 tbsp milk  if it gets too thick.  Spread on the cupcakes.

Serve and enjoy!
